Baked Beans

5 cups water
1 lb dried navy or pea beans, rinsed
1 medium onion, sliced
3 Tbsp packed brown sugar
1 Tbsp molasses
1 tsp salt
1/4 tsp dry mustard
1/8 tsp pepper

  1. Soak the beans overnight. Discard soaking liquid the next morning.
  2. Put the new water and the beans in a slow cooker. Set on high for 4-6 hours.
  3. When beans are done, ladle out any liquid above the bean level.
  4. Mix brown sugar, molasses, salt, mustard, and pepper, then pour into crockpot. Add the sliced onions and stir everything in.
Put the seasoned beans on high for another 4-6 hours.
