1 Tbsp oil
2 Tbsp cumin seed
2 tsp mustard seed

1 fresh green chili
2 medium onions OR 1 large onion (340 g, 136 cal)

1/2 cup spice blend:
2 tsp amchur powder
2 tsp garam masala
2 1/2 Tbsp coriander
3.3 Tbsp red chili powder
1 tsp turmeric

1 1/2 tsp salt (optional)

1 bag frozen okra OR 5.5 cups fresh okra (~50 pods)
4 Roma tomatoes, cut into fourths
1 can diced sodium-free tomatoes

Heat oil. Add seeds. (You will have to stir to coat the seeds in oil properly.) Once popping, add chili and onions and stir-fry for a few minutes until the onion starts to soften.

Add okra, then add other spices, stir-frying for a few minutes.

Finally add the tomatoes and sauté until the fresh tomatoes are just softening.
