Chickpea Tomato Salad Template

Salad
1.5 cups boiled or canned cooked beans 150 cal
1 Tbsp finely chopped parsley

Choose one (1 veggie):
300 g tomatoes, chopped (1 large Roma is about 170 g) 50 cal

Choose one (1/2 veggie):
1 cup sprouts 31 cal
170 g cucumber (~1/2 cucumber) 26 cal
50 g kale 25 cal

Choose one (1/2 veggie):
1/4 cup finely sliced or chopped leek 27 cal
3/4 cup finely sliced or chopped green onions 24 cal
60 g raw onion 24 calories

Veggie target: 100 cal

Dressing
1 Tbsp water
1 Tbsp liquid sweetener of your choice
1 Tbsp vinegar of your choice
1 tsp Dijon mustard
1 tsp chervil

Mix all salad ingredients together in a bowl. Combine all dressing ingredients in a bowl and whisk together. Toss salad with dressing.
