4 Tbsp white whole wheat flour
2 Tbsp brown sugar
2 Tbsp unsweetened cocoa powder
1/4 tsp baking powder
3 Tbsp plant-based milk
1/4-1/2 cup unsweetened applesauce
1-2 drops vanilla extract
1 dash cinnamon
2-3 Tbsp vegan chocolate chips
Whisk flour, sugar, cocoa, baking powder, and cinnamon together in a small bowl. Set aside. For a really sweet cake, add more sugar to taste.
Whisk 1/4 cup applesauce, nondairy milk, and a drop or two of vanilla extract together in another small bowl.
Pour wet mixture into dry mixture and then add chocolate chips. Stir well to combine.
Add another 1 to 2 tablespoons of applesauce, until the batter is wet and resembles regular cake batter.
Pour batter into a coffee cup, and microwave for three minutes (at 1000 W). If your microwave is weaker or stronger, adjust accordingly.
