Ingredients
4-6 pickled beets (400 ml grated)
1 sour apple
1 small yellow or red onion
3-4 Tbsp sliced sour pickles, chopped or julienned
1 dl cashew sour cream (optional)
1-2 Tbsp beet pickle juice
Salt and pepper to taste
Preparation
Grate the beets using a large-gauge grater or cube them. Core the apple and grate that too. Peel and chop the onion. Put everything in a bowl. Mix the cashew sour cream with some beet juice and season with salt and pepper to taste to make the sauce. Pour the sauce over the beets, apples, and pickles and mix gently to coat. Serve immediately.
