Dark vegetable broth

Makes 1 liter

1 small head of cauliflower, divided into sections
5-6 sections of broccoli
3 chopped carrots
5-6 sliced mushrooms, preferably dark with strong flavor
1 chopped stalk of celery
1 chopped large onion
6 crushed cloves of garlic
3-4 sliced salad onions
1 chopped tomato
3-4 bay leaves
3-4 basil leaves
2 Tbsp brown lentils
water

Put all ingredients in a large, thick-bottomed pot. Cover with water and bring to a boil. Simmer carefully for at least an hour, preferably two, then strain and use as needed. Keeps for a day in the fridge.
