1 orange
2 cups fresh spinach
1 red bell pepper, cut into thin strips
2 Tbsp golden raisins
2 cups Napa cabbage, shredded
12 oz Island Tofu
Cumin Vinaigrette
4 Tbsp fresh lime juice
1 Tbsp orange juice
1 Tbsp Dijon mustard
1/2 tsp cumin powder
1/4 tsp black pepper
1 Tbsp water
Make vinaigrette. Toss salad ingredients with vinaigrette.
