Kentucky Cornbread

From Extending The Table: A World Community Cookbook. Cornbread is eaten with most meals in Kentucky. This is a basic recipe from the cook of the Hindman Settlement School in Kentucky.

Ingredients
1 cup white wheat flour
1 cup cornmeal
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt (optional)
1 1/2 cup plant milk

Preparation
Mix the ingredients together into a cake batter-like consistency. Pour into a non-stick 8x8-in pan (2L) or nonstick muffin tins. Bake for 30-35 minutes at 350F. Serve warm.
