Mushroom and Chard Crepes

Filling Ingredients:
2 cups shiitake mushrooms, stemmed
½ cup chevre (goat cheese)
2 cups chard, cut into strips
2 cloves garlic, minced
1 teaspoon chile flake
¼ cup fresh herbs, chopped
Oil to sauté
Salt to taste

Directions:

1) Saute mushrooms until soft.
2) Add garlic and chard and sauté two minutes more.
3) Add chile flake, herbs, and salt. Stir until well incorporated.
4) Add goat cheese and turn off heat. Set aside.

Crepe Ingredients:
½ cup flour
½ cup milk
¼ cup water
2 eggs beaten
2 tablespoons unsalted butter melted and cooled to room temperature
½ teaspoon salt

Directions:

1) Puree or blend all of the ingredients together and let sit for one hour before cooking.
2) Assemble crepes with filling.
