Equipment: 4-liter pot, food processor
3 cups water
1 cup beans (black-eyed, adzuki, lentil, chickpea, or kidney)
4-inch piece of kombu
1/4 cup dark miso
1/2 cup walnuts
Rinse your bean of choice well and drain. Soak beans for 6-8 hours in water (unless using lentils which don't need soaking). Drain soaking water. Add 3 cups of water, beans, and kombu to 4-liter pot over medium-high heat and bring to boil. Reduce heat to medium-low and simmer for 40 minutes, until beans are very tender. Drain water from beans and set aside to cool. Bake walnuts at 350 degrees until lightly roasted. Add all ingredients to food processor and blend until desired consistency. Place mixture into an oiled pan loaf and bake for 10 minutes at 350 degrees.
