Pinto Beans

3 cups pinto beans
6 cups water
4 -inch piece of kombu
1/2 tsp salt
2 cloves garlic, diced
1/2 onion, diced
1/4 cup chopped cilantro
1/8 cup chopped green onions (optional)

Rinse beans well and drain. Add water and soak for 6-8 hours or overnight. Rinse and drain beans again. Add 6 cups water to a 4-liter pan, add beans and kombu and bring to boil over medium-high heat. Add the salt, garlic, and onion. Lower heat and simmer for 40 minutes. Garnish with cilantro and green onions.
