Ingredients
2 lbs new potatoes, halved
1 lemon, thinly sliced
Salt and pepper to taste (optional)
2 Tbsp coarsely chopped dill
Preparation
Heat the oven to 450F. On a rimmed baking sheet, toss the potatoes with the lemon slices, any salt, and pepper. Roast, tossing once, until tender, 20-25 minutes. Toss with the dill before serving.
