1 1/4 kg flour (you choose whatever flours you like and have, for example equal parts rye, whole wheat and white, refined wheat)
1 l cold liquid (water, or half water, half buttermilk)
25 g yeast
1 tsp honey
1 tsp salt
Dissolve the yeast, honey, and salt in some water. Add all the liquids. Mix in the flour. Put the dough directly into two non-stick (or greased regular) bread loaf forms. Put the loaves into a cold oven that is set for 100 degrees Celsius. Let them sit for 40 minutes. Then, turn up the oven to 250 degrees Celsius and bake for 40 minutes. The bread is now ready. Take it out of the forms, wrap it in a linen towel and let it sit to the next day.
