Soupe aux Choux - Garbure

Adapted to be vegan from Julia Child.

3 1/2 l water
7 1/2 - 10 dl peeled potatoes, quartered

Put the potato pieces in the water and bring to a boil.

900 g or 3 l roughly sliced cabbage
8 crushed peppercorns or a big pinch of ground chili pepper
6 parsley stalks and a bay leaf, tied together
1/2 tsp marjoram
1/2 tsp thyme
4 crushed garlic cloves
2 medium yellow onions with a whole clove pushed into each one
2 peeled carrots, quartered
Choose one or more:
2-4 peeled parsnips, quartered
2-3 sliced stalks of celery
2 1/2 - 5 dl fresh white beans (alt. already boiled white or red beans)

Add the cabbage and the other ingredients, other than the beans if using dried boiled beans. Simmer with the lid ajar 1 1/2 - 2 hours, or until the cabbage is soft. Remove the parsley package. Add the beans (if not fresh) and boil another 10-15 minutes. Serve hot.
