500 g (approx 600 ml) yellow peas
1 1/2 l water
1 tsp salt
2 yellow onions
1 whole piece ginger (optional)
2 tsp dried marjoram and/or thyme, or 1 tsp of each
2 vegetable buillon cubes
1/2 leek (optional)
Peel the ginger, the onions, and clean the leek. Cut the onion into slivers and finely chop the leek.
Bring the peas and the water to a gentle boil. Add the ginger piece. Boil the peas covered until soft, 45 min - 1h 15 min.
Toward the end, add the marjoram and/or thyme, the vegetable buillon cubes, and the leek. Taste. Dilute with water as needed. Serve with Dijon mustard.
