姜冬瓜 (jiāng dōngguā) Winter Melon Braised with Ginger

Ingredients
6 slices ginger, finely shredded
1 kg (2 lb) fresh winter melon (冬瓜 dōngguā), peeled, seeded, and cut into 3 cm (1 in) slices
1 tsp salt
1 Tbsp sugar
125 ml water

Preparation
1. Heat wok and water sauté the ginger and winter melon.
2. Continue stir-frying until the surface of the winter melon starts to soften, about 3-5 minutes.
3. Add the salt, sugar and water. Cover the pot or wok with a lid, lower heat to medium, and let simmer for about 15 minutes, or until thoroughly cooked and tender. Transfer to a serving plate.
