炒莲藕 (chǎo liánǒu) Stir-Fried Lotus Root with Spring Onions

Ingredients
2 whole fresh lotus roots ( liánǒu) (about 250 g or 1/2 lb)
6 spring onions, cut into 1 cm (1/2 in) pieces
1 tsp salt
125 ml (1/2 cup) water
1 Tbsp toasted sesame seeds (optional)

Preparation
1. Wash the lotus roots well, slice them crosswise into round pieces about 1/2 cm (1/4 in) thick.
2. Water sauté the sliced lotus and spring onions together with the salt for 2 to 3 minutes in a hot wok.
3. Stir in the water, then cover with a lid, and lower heat to medium, simmering for 5 minutes. Transfer to serving dish and garnish with toasted sesame seeds if desired.
