2 8 ounce packages cream cheese (I used 1/3 less fat), at room temperature 1/2 cup mayonnaise (I used light) 1/2 cup roasted red bell peppers, chopped 6 jalapeno peppers, seeded, ribbed and finely diced 2 cloves garlic, minced 2 tablespoons cilantro, finely chopped 2 tablespoons lime juice 1 1/2 cups Mexican blend shredded cheese, divided 1 teaspoon Ancho chili powder 1 teaspoon ground cumin 1 cup panko bread crumbs (I actually reduced this to about 1/2 cup)
