2 large portabella mushrooms, chopped into small pieces (about 4 cups)

2-3 medium carrots, cut into 1/4 inch pieces (about 1 cup)
2 ribs celery, chopped (about 1 cup)
2-3 cloves garlic, finely chopped (2-3 teaspoons)
1 1/2 cups water
3 tablespoons tomato paste
1 1/2 teaspoons dried thyme (or1 tablespoon fresh thyme, finely chopped)
2 teaspoons paprika

1 cup mashed potatoes
