Ingredients
2 cans (15 oz) black beans, rinsed and drained 2 cans (14.5 oz) diced tomatoes with green chilies {I prefer mild} 1 can (15 oz) roasted tomatoes OR roast your own like I did yesterday! 4 cups liquid {I use a combination of chicken broth and water} 1 (12 oz) package frozen corn 1 (4.5 oz) can chopped green chilies {If you don’t like spicy food, leave these out} 5 green onions, chopped {I snip mine with scissors} 2 T. chili powder {more or less depending on your taste} 1 t. ground cumin 3 cloves garlic, minced 1 1/2 t. salt {added toward the end of cooking time}
