1.5 pounds of boneless, skinless chicken (thighs are best but breast is fine too) - cubed
3 TBSP - Masa Flour
3 TBSP - Extra Virgin Olive Oil
1 tsp ancho chile powder
1 TBSP butter
4 large carrots, sliced 1/4 inch
4 celery stalks, sliced 1/4 inch
2 leeks, sliced
6 garlic cloves, diced
3 small golden potatoes, cubed (or Hominy if you prefer)
2 boxes, organic chicken stock (regular not low sodium)
1 TBSP fresh thyme, chopped
lots of fresh cilantro, chopped
1 bay leaf
1/2 cup roasted green chiles, chopped (I used mild Hatch - use whatever you prefer and vary accordingly)
1 ear roasted corn, kernals removed from ear
