A great side dish or a meal on its own. This is a Polish/Hungarian dish. Can use bacon but I cut back on that to make it meatless. Also can garnish with poppy seeds. Adding peas for color and nutrition. Bacon is a yummy addition for those that eat meat. Just brown drain most of the fat then add butter and oil and brown onions. Be sure to give the onions a nice brown color using a med high heat.

I like this one not only because it is lower fat, but because it doesn't have as much added sugar, and it relies on the cereal more than the flour to make the batter. I played around with my family's No Bake Cookie recipe and produced a single portion of this cookie that I feel is healthy enough to eat as a meal. They're still very good but are much healthier. I keep getting asked for the recipe, so I finally decided to measure out the exact portions and post the recipe. THIS RECIPE IS VERY FLEXIBLE! When I make them I NEVER measure out anything and I often add more or less of ingredients and they still taste great. I sometimes leave out the wheat germ and flax seeds and just add more oatmeal. I have made these replacing the sugar with about 3 tablespoons of honey. I have changed the recipe from 1 tsp. to 1 Tbsp. of cocoa powder.

The idea to make these popped into my mind when I made **Jubes** Quick Gluten Free Scones #220200 for the first time. Instead of cutting out scones I rolled the flattened dough and thought that actually I could have filled it. So I made a second batch of dough and made up my own version of cinnamon roll filling. I really liked that they were not overly sweet as the dough is not sweetened. As usual, I used rice syrup, but will suggest honey which might be slightly sweeter. Instead of the pine nuts you can of course use any other nut you like. I thought about pecans and maple syrup for the filling - if anyone feels like trying that, please tell me how it turned out!

I bought a 20lb bag of bananas at Krogers for $1.00 and have been trying to use them all up. This is one of the recipes I made in the process. It was by far the most scrumptious recipe that I made. It could also be made into a bread, but I made muffins. This is definitely my new default banana bread recipe! Imade a double batch and ended up with 39 muffins. I made half with the called for maple syrup/pecan topping and half with a cream cheese topping. To make the cream cheese topping, I whipped 6oz cream cheese with 1/4 cup brown sugar and 1/4 cup maple syrup. These were absolutely heavenly fresh out of the oven. *For the gluten free flour, I used Bette Hagman's mix: 2 parts garfava bean flour, 1 part sorghum flour, 3 parts cornstarch, and 3 parts tapioca flour.
