I didn't mean for this to happen. I meant to make zucchini bread, though why it's considered perfectly normal to put zucchini in bread but not in cookies is beyond me.
This is a winner of a recipe. It's delicious, hearty and is so pleasing to look at (and eat). You could even make this the night before and reheat in the morning!
Here's a low-fat dinner suggestion that combines turkey and artichokes into one delicious casserole. Use the make-ahead directions when you need a warm meal on a busy night.
