Chipotle Cheddar Corn Bread

This cornbread is almost a meal, with its generous quantity of cheddar cheese and other savory elements. And although I do not usually serve corn bread with honey, for some reason this corn bread cries out for it. I even found myself wishing for Honey Butter, which is simple enough to whip up if the mood strikes you.

Garden-Style Lasagna

Vegetable lasagna is a crowd-pleaser and a classic make-ahead dish. You can use precut onions, matchstick-cut carrots, and broccoli, in addition to precooked noodles, to speed up preparation. If you make it ahead, let it cool completely, then cover and chill. The next day, heat single servings in the microwave. Freeze leftovers for dinner.

A simple mixture of toasted walnuts and sherry vinegar provides a rich, yet good-for-you dip for the artichoke leaves. Remove the leaves and dip into walnut vinaigrette, using your teeth to scrape the meat found on the inside of the artichoke leaf. Make sure to remove the fuzzy choke from the center of the artichoke before eating the heart.

Tortilla Espanola with Rainbow Chard

This week at The Forest Feast, I needed to use up some chard from the nearby farmer's market, so I cooked up a big skillet Tortilla Espanola. This dish is usually made with just potatoes and onions, but I like to add some greens — it becomes almost like a crustless quiche. The addition of the colorful chard lightens the dish a bit, but is still quite filling. I like that this meal is made in a single pan and works well for breakfast, lunch or dinner!

Vegan Oatmeal Pancakes

As the first person out of bed in her house on Saturday mornings, Mary Shore savors the time to ease into the weekend. “We try to keep cooking simple so the relaxed mood lasts through the morning,” she says. These winning pancakes came out of her desire to develop a vegan version of her favorite restaurant pancakes: “My mom taught me to substitute a little vinegar in milk when there was no buttermilk in the house, and the cider vinegar in soymilk here has the same effect of lending a little zing.”

Hearty Cabbage Soup with Sausage and Potatoes

Cabbage is a satisfying vegetable to grow in the garden like carrots and parsnips. It is relatively undemanding and available from July on in the garden. In the fall after hard frost, when you have harvested everything from the garden, it will keep in the fridge for at least a month. We consider it a staple, like carrots or onions, that we almost never have to buy.Cabbage, by many, is considered a poor man's vegetable and thus there are millions of recipes from around the world for wonderful cabbage soups. The following was inspired by the Frugal Gourmet Cooks with Wine, with my adaptations.

Baked Shell With Roasted Red Pepper Cream Sauce and Italian Sausage

A base of roasted red pepper cream sauce swaths pre-cooked, medium-sized pasta shells. I like the sauce smooth and silky, so I purée the roasted pepper mixture before adding a combination of heavy cream and half-and-half, along with three cheeses: ricotta, Fontina, and Asiago. Italian sausage, garlic, and onions, boost the sauce with extra flavor.

Drunken Clams with Sausage

I developed this dish by experimenting with my favorite ingredients -- clams, sausage, wine and heavy cream. I love it because it is simple to make, because it takes very little time, because it impresses the crowd, and most of all, I love it for the broth! The broth takes me to another world and I can never have enough of it. But the key to getting the dish right lies entirely in CLEANING YOUR CLAMS PROPERLY! So before you go and take the plunge, here is a link to a pretty good explanation on how to do it http://www.thekitchn.com/how-to-clean-the-sand-out-of-c-58389.

Brown Butter Peaches & Chantilly Cream

There are plenty of outstanding dessert recipes that make good use of bountiful summer peaches. Some are as simple as drizzling a few halves with olive oil and throwing them on the grill, while others, like a cobbler or freshly-churned ice cream, require just a smidge more effort. This easy recipe — a grownup take on a childhood classic — falls on the delightfully relaxed end of things. Sliced peaches are tossed in a toasted brown butter sauce and finished off with a crown of barely whipped cream. To me it feels like summer in a bowl.

Pumpkin Pecan Pull-Apart Bread with Maple Bourbon Icing

I flavored the dough with the pumpkin and added cardamom. I love the warmth of cardamom and it is a great partner with pumpkin. The filling was simple, toasted pecans, sugar and melted butter. The dough is only lightly sweetened so a filling with sugar is perfect for this recipe. The cream cheese icing was really the star of this bread. We love maple. We love bourbon. And the two together with cream cheese and a little sugar is … heavenly.

Milk-Poached Chicken with Tarragon and Peas

I don’t love boneless, skinless chicken breasts. They rank among the ingredients that, as a recipe developer by profession, I see well enough in my work life that I would rarely — if ever — bring home in a grocery sack of my own choosing. Poaching chicken breasts in milk, however, is a very simple way to enhance the cut’s texture and flavor through tender, gentle cooking that ends with tucking it into a bed of noodles. Watch the milk carefully to ensure it never visibly simmers — the key to this recipe’s success is taking usually quick-cooking ingredients and slowing down the tempo to find their softer side.

Dorie Greenspan's 3-Ingredient Almond Crackle Cookies

When you call Dorie Greenspan to say you’re coming over, this is what she bakes. “It takes longer to preheat the oven than to put these cookies together,” she wrote to me. “I love them for a million reasons, but chiefly because they're a simple pleasure that can be shared on the spur of the moment.” She includes a perfectly round variation in her book using muffin tins (and plenty of baker's spray to help them break free), but we preferred the ease and charm of the freeform version. Adapted slightly from Dorie's Cookies (Rux Martin/Houghton Mifflin Harcourt, 2016).

Konigsberger Klopse (German Meatballs in Creamy Caper Sauce)

A classic! Authentic Knigsberger Klopse are made from ground veal, beef, and pork, along with a small amount of anchovies (or sardines or herring), chopped onions, bread crumbs, eggs, and spices. The traditional creamy sauce that accompanies the dumplings are made from the broth in which the dumplings were cooked, flour, cream, white wine, lemon juice, and capers. Delicious! Serve with boiled new potatoes and my Rotkohl recipe #108449 #108449. Also makes a great appetizer! A little history: Predecessors of the Knigsberger Klopse date back to the Middle Ages. However, the East Prussian name Klops (Klops = meat dumpling) didn't originate until the 18th century. Knigsberger Klopse was invented in the city of Knigsberg (then the capital of East Prussia; today known as Kaliningrad, Russia) around 200 years ago. My German/Polish/French grandmother was born and raised in East Prussia, about 30 kilometers from Knigsberg. This recipe is my version of her delicious Knigsberger Klop
