I love St. Patrick's Day recipes. Corned Beef and Cabbage is a must for us and after a hearty meal like that there's nothing like a sweet dessert to wash it down.
In this version of a stir-fry classic I am using less beef than a typical recipe would call for and adding in some shiitake mushrooms and extra peppers
Minestrone soup is an Italian classic! This version is made with cannellini beans, chicken stock, cabbage, potato, zucchini, carrots, plum tomatoes, and Parmesan cheese.
Have not tried this yet, but it looks like something the kiddies would love. Make a cornmeal batter, stir in sliced hot dogs and bake in muffin tins. Very easy to do. Since I have not made these, I am guessing at how many it makes.
Snapper is seasoned with cumin seeds, sea salt and black pepper and then grilled until crispy but moist on the inside. Served on corn tortillas with a cabbage slaw and chipolte creme sauce.
There's fiesta night, and then there's FIESTA NIGHT! Carnitas tacos is about as good as it gets at our house. This recipe is mostly hands off because you put it in the slow cooker and forget about it (except that your house smells like delicious pork). Leftovers are great for quesadillas, taco salad, or pulled pork sandwiches.
