These squares are dressed up with a sweet and tangy apple cider sauce and a dollop of low-fat ice cream; they also make a satisfying simple dessert or snack on their own. My mother's signature Spanish rice recipe, a delicious accompaniment to steak, chicken, and Mexican entrees such as tacos or enchiladas. Spanish rice is browned first with onions and garlic, then cooked in chicken stock with added tomato.

Ever wonder how the local gourmet stores makes its couscous salad so golden yellow? It's turmeric. This spice lacks much flavor, but makes up for it in its exquisite color. The following recipe is as elegant as it is easy to make. Serve the couscous and the kebabs warm off the stove, or cold the next day. Click here to visit the new home of KitchenDaily!
Tri-colored bell peppers are the star of this colorful vegetable skewer recipe. The pepper's sweet, delicious flavor will soak into the zucchini, as the garlic-infused olive oil scents the earthy mushrooms. Vegetable skewers are a welcomed addition to any barbecue or cookout, and a great way to use fresh seasonal vegetables.
This Stuffed Green Peppers recipe contains Sweet Italian Sausage, long-grain brown rice, grated Parmesan cheese, green bell peppers, grated mozzarella cheese and more.

This version is meatless, but there's nothing to stop you from sprinkling ground beef that has been seasoned and browned, between the layers, if you like. Serve with a spinach salad on the side for a complete meal. Ingredients with an asterisk (*) are available in the Whole Foods Market Family of Brands.
I originally found this taco casserole recipe in a Taste of Home magazine. Since then, I have made this recipe at least 50 times. I love it because the ingredients list isn't complicated and, based on the layers, I can readily remember all ingredients when I am at the store without my recipe card. I have served this for myself and had wonderful leftovers or many times I have made it for company with a nice green salad to accompany it. I hope you enjoy it as much as I do.
