Black Bean Orange Peel Edamame

These are salty, sweet, fragrant, finger-licking good. You can either make them in the pods, slurping the sauce clinging to the outside while stripping out the beans with your teeth or use shelled beans in a saucy side dish. We often serve a version of this for guests to snack on while we tend the grill or finish in the kitchen.

Spinach and Feta Grilled Turkey Burgers

Turkey burgers usually suffer from an identity crisis. They’re shaped like a burger, they’re made from ground meat, they’re served on buns, but -good golly- they are usually shoe leather dry and sorrowfully bland. The dry bit  is because we all like our stomachs where they are in the shape they’re already in and in...Read More »

Mediterranean Orzo Salad

This salad highlights many fresh flavours of the Mediterranean and is at its best when made with good-quality olive oil. To pit several olives at once, place them on a cutting board and lightly crush with the bottom of a small saucepan to expose pits before removing. Stir this salad lightly with a fork before serving to loosen the pasta.

Slow Cooker Carnitas

There's fiesta night, and then there's FIESTA NIGHT! Carnitas tacos is about as good as it gets at our house. This recipe is mostly hands off because you put it in the slow cooker and forget about it (except that your house smells like delicious pork). Leftovers are great for quesadillas, taco salad, or pulled pork sandwiches.

Steamed Artichoke with Creamy Walnut Dip

A simple mixture of toasted walnuts and sherry vinegar provides a rich, yet good-for-you dip for the artichoke leaves. Remove the leaves and dip into walnut vinaigrette, using your teeth to scrape the meat found on the inside of the artichoke leaf. Make sure to remove the fuzzy choke from the center of the artichoke before eating the heart.

Sweet Beet Cookies

I don't like beets! That was my darling son's response when I told him I had made Sweet Beet Cookies. I thought sandwiching the word beet between sweet and cookie would serve as sufficient enough distraction for Kenya. Not so much. And since I never want to trick my kids into eating foods that are good for them and hope they learn to love them on their own, simply calling this recipe something like Red Cookies was out of the question. But if the name itself wasn't a selling point, the site of these cookies...

Italian Asparagus Sticks

First and foremost, weelicious is about recipes for kids -- or at least that was the intention when I started this website for little ones almost four years ago. I dreamt of coming up with meal ideas that would appeal to kids and inspire them to eat foods that are not only good for them, but that taste delicious at the same time. Something has happen along the way, though. I've realized that we're all kids at heart and even adults love the idea of food that comes in interesting shapes, has bright colors, unique flavors or an engaging aspect to them. So, did I make these Italian Aspargus Sticks for: my kids or me and my hubby? The kids and I had...

Drunken Clams with Sausage

I developed this dish by experimenting with my favorite ingredients -- clams, sausage, wine and heavy cream. I love it because it is simple to make, because it takes very little time, because it impresses the crowd, and most of all, I love it for the broth! The broth takes me to another world and I can never have enough of it. But the key to getting the dish right lies entirely in CLEANING YOUR CLAMS PROPERLY! So before you go and take the plunge, here is a link to a pretty good explanation on how to do it http://www.thekitchn.com/how-to-clean-the-sand-out-of-c-58389.

Coconut Tres Leches

I started making tres leches because it is my neighbor's favorite thing and I like her. I started with Martha Stewart's recipe which is a great jumping off point -- but it is not as juicy as a traditional tres leches, which you will find resting in a shallow lake of sweet milk. So I adjusted up for that, and here I have swapped in some coconut, some lime (because it is one of coconut's BFFs) and I used Tahitian vanilla which is a bit more floral than Mexican (but if you can't find it, go with whatcha got). It's rich and milky and coconutty and good. Ask the neighbors.

Pumpkin Apple Muffins

Whenever there's a seasonal item at Trader Joe's like pumpkin puree, I get so excited that I lose control and end up buying at least 10 cans of it. Individual Pumpkin Cheesecakes, Pumpkin Milkshakes, Pumpkin Seed Cookies, Pumpkin Waffles....those are a few of the things I love to make with pumpkin puree, just to give you a hint of my obsession with it. In general, I try not to eat a lot of canned foods, but if there's one thing that is simply easier and tastier to get from a can, it's pumpkin puree. Roasting and pureeing an entire pumpkin, is a time consuming task that I don't recommend doing, especially when their are a couple of very good...

Brown Butter Peaches & Chantilly Cream

There are plenty of outstanding dessert recipes that make good use of bountiful summer peaches. Some are as simple as drizzling a few halves with olive oil and throwing them on the grill, while others, like a cobbler or freshly-churned ice cream, require just a smidge more effort. This easy recipe — a grownup take on a childhood classic — falls on the delightfully relaxed end of things. Sliced peaches are tossed in a toasted brown butter sauce and finished off with a crown of barely whipped cream. To me it feels like summer in a bowl.
