I started with Martha Stewart's recipe which is a great jumping off point -- but it is not as juicy as a traditional tres leches, which you will find resting in a shallow lake of sweet milk. So I adjusted up for that, and here I have swapped in some coconut, some lime (because it is one of coconut's BFFs) and I used Tahitian vanilla which is a bit more floral than Mexican (but if you can't find it, go with whatcha got). I was so excited to see your best broiled steak recipe contest. Steak is one of my favorite foods and while barbecuing outside is ideal for some, it is one of the few barbecued meats that actually benefits from the broiler. Why? Because you can control the heat and it won't burst into flames when you put the lid down, run inside and came back out to find fat has dripped down into the flames and set your beautiful piece of meat aflame.This is a recipe my dad used to make when I was a kid. He is recently deceased (cancer) but his spirit lives on in the meat each time I eat it and think of him. He used to rub the entire steak in a liberal dosing of pure yellow mustard, then add salt and pepper. I have updated it a bit, by substituting dry mustard and changing the spicing a bit. But its still every inch his recipe. The key is to buy a New York roast and cut it yourself into nice 2 1/2 inch slabs (or have your butcher do it.)

As promised in my Healthy Habits: My Typical Meal Plan post, here is the recipe for my all-time favorite meal for dinner: almond chicken. It's super healthy and it's really easy to make (remember, if I can make it anyone can). I found this recipe online over a year ago and have been loving it ever since! It makes me think I'm eating fried chicken fingers, but it's actually just healthy chicken breast breaded in wheat flour and almonds. Put it this way-my 8 year old sister devours these like she would a McDonalds Happy Meal, but they're healthy! I make this recipe at least once a week. It keeps well for a few days in the fridge so I usually just heat them up on a cookie sheet in the oven when I want the leftovers. I cannot explain how yummy it is to eat yet easy it is to make. Like I said, I've made it at least once a week for over a year now (OK, I'll admit it, it's one of the only things I actually can cook) so it's like second nature for me to whip these up.
