I leave you with this creamy cheesy not-so-waistline friendly mashed potato casserole. Bacon, gouda, sour cream... I probably don't need to tell you that it's heavenly.
The outsides are crisp and browned while the insides remain tender and fluffy. There is a sweetness to these potatoes which lends well to the bright lemon zest, sharp garlic, herbal parsley, and mellow cheese.
Fabio Trabocchi sears golden, buttery fingerling potatoes and tosses them with fresh dill; if you can't find fingerlings, try baby Yukon Gold potatoes. For a lighter version, leave out the pancetta.
