Even though the weather is getting warmer and we’re turning towards healthy grilled recipes like the Grilled Vegetable Wrap with Hummus that I made last week, I can’t help but throw some comfort food into the mix every few days.
I always poached chicken when I needed cooked for a recipe - and I never liked the way it came out. I was watching Ina's show on the Food Network last weekend and this is how she cooks her chicken for recipes. I tried it and it was the most moist chicken I have ever had. I used it in chicken noodle soup - YUM!!! The recipe can be increased or decreased depending on how much cooked chicken you need. UPDATE 7/31/07 - I tried this method on boneless, skinless chicken breasts and it worked great - I baked for about 35 minutes and it was cooked perfectly!
Tossing chicken tenders with cornmeal gives these chicken nuggets great crunch without deep-frying. Blackberries (or raspberries, if you prefer) combined with whole-grain mustard make for a sweet-and-savory dipping sauce. Serve with: Steamed broccoli and carrots.
For a great tasting weeknight dinner with lots of bold flavor, try Jerk Chicken and Stuffed Mini Bell Peppers. The mini bell peppers will be a big hit, and the creamy filling will help tame the heat of the jerk chicken.
The humble chickpea steals the show in this stellar chicken stir-fry. Give your 'peas a crispy, spicy coating in your skillet then sprinkle them liberally.
