Peach Cobbler

This is by far the best peach cobbler recipe I've found. It tastes more like the peach cobblers my mother and grandmother made. The dessert recipe is simple to make and all the ingredients are readily available. If friends or family are coming by, I can prepare this dessert, pop it in the oven and wait for the oohs and aahs as my guests are welcomed to our home by the warm aroma of fresh-baked peach cobbler. –Member Review

Southwestern Pizza with Black Beans and Corn

As a regular visitor to the Columbus Brewing Company in Columbus, Ohio, I probably ate their Sante Fe Pizza at least once a week. I just couldn't resist that spicy black bean "hummus" spread on chewy flat bread and topped with plenty of cheese, no matter how many times I promised myself that I'd branch out. Moving away left a definite void in my life. Here is my small ode to both the CBC pizza and the incredible folks, my friends, who work there.

Five Treasure Fried Rice

This recipe makes good use of leftover broccoli stalks, but its easily adaptable, so feel free to substitute other vegetables you might have in the fridge—asparagus, zucchini, peas, mushrooms, bok choy, bean sprouts, and jícama are all possibilities. The chewy brown rice has a nutty flavor, and you just can't argue with its antioxidant power and fiber. If you order the brown rice with Chinese takeout, bear in mind that the rice has to be well chilled so the starch hardens and becomes fry-able. Use fresh rice and you wind up with a gummy mess.

Banana Maple Pecan Bread Muffins (Gluten-Free)

I bought a 20lb bag of bananas at Krogers for $1.00 and have been trying to use them all up. This is one of the recipes I made in the process. It was by far the most scrumptious recipe that I made. It could also be made into a bread, but I made muffins. This is definitely my new default banana bread recipe! Imade a double batch and ended up with 39 muffins. I made half with the called for maple syrup/pecan topping and half with a cream cheese topping. To make the cream cheese topping, I whipped 6oz cream cheese with 1/4 cup brown sugar and 1/4 cup maple syrup. These were absolutely heavenly fresh out of the oven. *For the gluten free flour, I used Bette Hagman's mix: 2 parts garfava bean flour, 1 part sorghum flour, 3 parts cornstarch, and 3 parts tapioca flour.
