The inspiration from this cake came from Tartine's pumpkin tea cake. I wanted to make a lighter, cake-ier cake, closer to a dessert you'd eat at a dinner party than to a quickbread you'd eat for breakfast. The frosting recipe is based on my idol Dorie Greenspan's Tangy Cream Cheese Frosting.

This Crock Pot Enchiladas recipe contains flour tortillas, shredded colby jack cheese, lean ground beef, ranch style beans, red enchilada sauce and more.
Tex Mex chicken enchiladas, corn tortillas dipped in red chili sauce, rolled up with cooke chicken, covered with more sauce and shredded cheese, and baked.

This frosting is good for many types of cakes including carrot cakes, apple cakes, and spice cakes. Add flavorings to compliment the cake you are frosting. Try 1 1/2 teaspoons of grated lemon or orange rind, 1 teaspoon any extract, 1 teaspoon of liqueur, or a mashed banana.
