Some days you just need a slow cooker meal...! Love soups and was looking for something a little different. If you have an open jar or packet of thai curry paste in your fridge, and you like the flavour of it, this is another way to enjoy it. Most of the items are pantry staples, which is how this came to be, and it's fairly low calorie/low fat. I made it to fit a small crock pot (2.5 Q I think)....yields enough for 2 good sized portions. If you use a larger crock pot you would probably have to double the recipe. Some flat bread on the side makes it a meal.
This is my very own creation, I whipped this up one day quite by accident. I call this Joshua's favorite Tilapia, because my husband (like me) could eat this 7 nights a week if we could. This is the easiest way to cook Tilapia, and if you are watching those calories then you need not worry this is extremely low fat, oh and did I mention TO DIE FOR !!! This recipe is SIMPLE with FEW ingredients, but has the potential to add what ever you want. I like it AS IS !

You can't get any easier than this recipe. I clipped it from a Kraft coupon, tweaked it just a little bit, and have been making this for years. My kids just love it, and it has saved me on many-a-workday when I didn't feel like cooking but had to! I usually serve this with buttered pasta or chicken-flavored rice and a green veggie on the side. NOTE: Prep time includes marinating time.
I really love to eat this in the summer for a nice light dinner. I got it from the Mission Foods website but I tweeked it a little bit. This can be made without the chicken for a veggie dinner.
