A great side dish for fennel lovers, originally from a friend in Israel. I have used water instead of broth, with some added salt and seasoning. I have also replaced the mustard seed with regular mustard.
Pernil is pork marinated in a sauce of bitter orange juice, onion, garlic, achiote, cloves, cinnamon, cumin and panela and slow roasted in the oven for several hours.
Look for hoisin sauce in the Asian section of your market. Clover honey would work for this dish if you can't find sage honey. Serve with green salad and mashed potatoes.
