I make these late and often -- this is my back-pocket 10-minute meal after a very long day or a longer party. They're fast, good food you can eat with your hands. And because tacos often spill at random, you’re allowed to be slightly animalistic about the whole affair -- a very good perk, because no one has the energy for manners in the middle of the night. I felt odd making these in a well-lit kitchen and styling them for a camera -- they are at their best when cooked by dim, early morning kitchen light, and hastily -- but you’ll rectify that for me tonight, won’t you?
Scrambled Egg Tomato Florentine Fritters - A summer fritter with fresh chopped tomatoes, spinach, basil, quinoa, and goat cheese, all held together with a scrambled egg.
I’ve found this breakfast alternative to be much more satiating than eggs. I like to double this recipe and make a large container for breakfasts (or a quick lunch or dinner) through the week.
Oh, yumm... These sourdough tortillas were awesome! Chewy, soft, and pliable! The second day, I heated them up in a warm skillet, one by one, where they retained all their first day softness.
aking homemade tortillas really doesn't take much time. In fact, they probably don't take much longer than the time it would take to pop open a can of biscuits and cook.

Eggs are perfect for any meal of the day and this onion frittata is the perfect breakfast, lunch, or light dinner. Made with softened onions and goat cheese then topped with a lightly dressed arugula salad. This frittata serves about 4 people and is ready in 45 minutes.
This layered Southwestern meal just can't be beat. It gets its spicy flavor from green chilies, chili powder and cumin. Using a slow cooker liner inside of the cooker makes it easier to lift and remove the meal so it can be cut into individual wedges. —Judy Ragsdale, Queen City, Texas Skip links
