I just couldn't resist that spicy black bean "hummus" spread on chewy flat bread and topped with plenty of cheese, no matter how many times I promised myself that I'd branch out. Moving away left a definite void in my life. Here is my small ode to both the CBC pizza and the incredible folks, my friends, who work there.
'I created this zippy side dish after eating something similar at a restaurant. It complements any Tex-Mex meal wonderfully,' writes Michelle Dennis of Clarks Hill, Indiana. 'Sometimes I add cubes of grilled chicken breast to the rice to make it a meal in itself.'
My husband requests these burgers weekly and loves every bite, notes Tina Green of Albany, Oregon. I usually make extra dressing and keep it in the refrigerator to use on beef sandwiches or wraps.
Substitute chicken for pork in this dish, if you prefer. Pink beans are similar to pinto beans, but smaller; if you can't find pink beans, substitute pintos. Add cheddar corn bread and orange slices to round out the meal.
